Ijebu vs yellow garri: choosing the right grain
Two fermentation traditions, two textures, two very different uses in the kitchen. A practical guide for buyers.
Garri is not one product. The length of fermentation, the amount of palm oil used during roasting and the fineness of the sieve produce distinctly different grains.
Ijebu garri is fermented longer, giving it a pronounced sourness and a fine, crisp granule that is prized for soaking with cold water, groundnuts and sugar. Yellow garri takes its colour from red palm oil added during frying, carries a richer flavour and swells generously — the natural choice for eba.
For buyers, the practical questions are granule uniformity, moisture and the absence of grit. Uniform granules swell evenly; low moisture keeps the product crisp through the supply chain; a clean sieve means no sand.
We grade both varieties against the same specification sheet, and we pack them in moisture-barrier formats so that what leaves our plant is what reaches the table.
